So, the time has come to share my favorite cookies with you. I call these my 'pick me up cookies' because that is exactly what they are! For those of you that know me, I am full of pep. I sometimes even annoy myself. The problem is that the pep begins when my little eyes open in the morning somewhere around 4:30 - 5:00am. I pop out of bed, full of ideas, energy, agendas and generally feeling like I can save the world! Yet, by 4:00 in the afternoon, my pep fizzles out and I still need to conquer homework, dinner and on really good days have an ounce of energy left when my hubby walks in the door at 6:30.
So, I turn to a cup of coffee (a better version of me would have tea, but it is what it is) and these yummy cookies. They are super delish, full of healthy stuff, beyond easy to make, and highly adaptable depending upon what is in the house at that moment (a must in my kitchen). Not only do these give me a little much needed energy, but they brighten my day to get through the rest!
I use a couple different flours to be a perfect blend of healthy, but yummy... They are gluten free, super light, moist and I adore them!! If you don't have gluten free or any of these flours, use what you have and they will still rock (I always do)!
I put in different add-ins depending upon the season and let's be honest... what I have in the house. (white chocolate chips & dried cranberries are fun for Christmas and winter; peanut butter chips are just good in anything at anytime; a little cinnamon/nutmeg/walnuts & raisin mix for the fall; lemon flavoring for a light summer treat)! Oh, and throw some frosting and sprinkles on them, and pass them on to the kiddos!!!
Pick Me Up Cookie Recipe
Preheat Oven to 350 & bake for 10 min. Throw everything in a bowl, mix and scoop on baking sheet (I usually put wax paper on cookie sheet to minimize washing (aka.... not washing). I usually get 12 very, nice size cookies out of this recipe. Relax, Enjoy & let these get you through the rest of the day (and then have them start your day for breakfast the next morning) !!!
2/3 cup oat flour
2/3 cup almond flour
2/3 cup gluten free flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup agave or maple syrup or raw sugar or any old sugar that you have
1/3 cup chocolate chips
1 teaspoon canola oil
1/3 cup almond milk or any milk you have
1/2 cup applesauce (I opt for unsweetened, but go with what ya got)!
1 teaspoon vanilla extract
